The fourth biennial Innovative Foods Centre conference will emphasise the science, applications and benefits of emerging technologies, with a focus on creating market opportunities for a range of value-added food products.

The organising committee is developing a specialised program that highlights the expanding role of emerging technologies global food industry trends such as health and nutrition, safety, quality and functionality as well as featuring aspects of equipment, market opportunities and associated commercialisation case studies.

Opportunities for novel products and advanced processing utilising emerging technologies will be presented through sessions and overarching themes based within food commodity areas including:

This year's program offers an exciting line-up of speakers, including international experts, equipment suppliers, researchers and businesses that have engaged in and benefited from emerging technologies across a range of food products.

FIESTA 2008, and the three previous Conferences, is the result of the establishment of the Innovative Foods Centre. The Centre was established in 2002 by Food Science Australia with support from the Victorian Government and expanded in 2005 through collaboration with The University of Melbourne, Swinburne University of Technology and CSIRO’s Food Futures Flagship. Since its inception, it has enjoyed remarkable support from industry and academia for its pioneering role in innovative and emerging food processing technologies. Our biennial Conference brings together internationally recognised experts from all stages of the food supply chain via an interactive and informed forum that focuses on the outcomes and benefits of emerging technologies.

The definition of 'emerging food processing technologies' has evolved over the past few years. Traditionally, these technologies were defined as non-thermal food preservation technologies designed to deliver better quality, fresher and safer foods. Today, it is recognised that many non-thermal processing technologies also offer the opportunity to modify the functional properties of food products or enhance the efficiency of 'traditional' food processing methods. The effects on the physical and nutritional properties of food products may, in some cases, offer additional benefits or new unique opportunities. These will also be focal points of discussion at FIESTA 2008.
